Peel potatoes (quantity as required) and chop into 3 cross ways to gain maximum crunching surface
Par boil, then sprinkle with semolina and shake with lid on to give a sweet crunchy texture when roasted
Put jar (or two, depending on how many potatoes) into a baking tray and heat to a very high heat in the oven
Place the potatoes carefully into the goose fat in the baking tray (so as not to splash yourself as it is extremley hot)
Roast in the oven for 45 minutes or until golden brown
